After some various experiments I have found that If you get some plain pork rinds and crush them up, add in your italian herbs and spices or what-have-you, this makes an EXCELLENT subsitute for the traditional breadcrumbs and cornmeal. And many people I have told this too actually prefer it over traditional style because more often than not its crunchier.
