  • For lower fat grilled cheese, put one slice of bread with cheese on a microwavable plate in microwafe for about 15 seconds, until the cheese is just melted. Then transfer this to a fairly hot, ungreased non-stick skillet. Add the other piece of bread, and simply toast the outsides of the sandwich.

  • A low fat grilled cheese sandwich can be made with whole grain bread, cheese of your choice and a George Foreman grill. Just spray the bread with a non fat cooking spray and cook on the GF grill. For added taste spread a deli mustard on the inside of the bread before placing the cheese on it.

  • When making mashed potatoes, along with some of the cooking water, add part of a package of dry Ranch Dressing Mix. Fluffy, yummy and only a trace of fat. Yum!

  • When cooking ground beef for Tacos or other Mexican dishes, cover the meat with water in a saucepan, break up with a fork, or potato masher, season well with beef and chicken boullion, and garlic powder, when cooked, drain off fat and water and you've got tasty meat without all of the fat. (You won't miss the good taste of the browned meat, I promise.) I generally add a can of fat free refried beans and use just a little of the water from the meat to moisten, then our Mexican Dishes are bean and beef ready. Enjoy!
