Elizabeth Yarnell has accomplished something unique with this collection of healthy recipes -- one pot meals that have texture as well as taste! With her unique 1-pot cooking method, you layer foods in order to achieve a dish which can be served as a whole, or divided into individual layers. It's up to you. And each layer has enough substance to stand on its own (except for soups and stews of course). In addition to promoting healthy eating habits, these recipes will save you time -- none are more than 20 minutes from prep to oven and most take no more than an hour to get to table. And of course, there are not a lot dishes to clean up afterward. The dishes are so delicious, your family will never suspect they are low in fat and calories and high in vitamins, minerals, and nutrients.
