This is fabulous cookware. We love the look and design as well as the functionality of the Calphalon Commercial Hard-Anondized line. The light gray handles contrasting with the dark slate colored anodized aluminum give the cookware a great industrial feel and design. The ergonomically designed "cool-V" handles are well balanced and the extra handle at the front of the pan makes it easy to move even a full heavy skillet. Lids have a good seal and also come equipped with a stay cool handle. Skillets, handles and lids are oven and broiler safe making this versatile cookware can that can pull double duty.

You may use metal whisks, spoons spatulas and other non-sharp metal utensils in this cookware, although electric mixers and the like would damage the surface. The heavy gauge, highly conductive spun aluminum makes for consistent heating and evenly cooked foods. Cleanup is easy in sudsy water with a Scotch-Brite® pad, although dishwasher detergents can damage the surface and void the cookware's lifetime guarantee. With a guarantee like that, you know this cookware is meant to last. That said, it does scratch relatively easily. You'll be able to get a lifetime of use out of this line, but it may not retain that pristine "just out of the box" look for long.

Note:
Avoid aerosol cooking sprays in any Calphalon cookware as these sprays can leave a gummy residue that is difficult to remove and can cause food to stick (even in non-stick cookware). A Misto oil sprayer, which sprays a thin coat of natural oil, is a good (and healthier) alternative to aerosol cooking sprays.
