Did you know that wild rice is used not only as a food item, but in making Botanicare Skin Care products and in the production of a wild rice beer? Wild rice is not really a rice but an aquatic grass, growing mostly in the North Central part of Minnesota. It has been a part of the lives and diet of the Native Americans for over 1,000 years! Wild rice has the highest protein count of all the cereal grains, is a good source of nutrients and fiber, has no fat, no sodium, no additives or preservatives and only 114 calories per 1/2 cup serving. It makes a perfect ingredient for diabetic recipes. The following recipes were provided by the Minnesota Cultivated Wild Rice Council, 1306 West County Road F, #109, St. Paul, MN, 55112, and the others were adapted from the Wild Rice For All Seasons Cookbook, by Beth Anderson Associates as noted. It was hard to narrow the choices for publication down to just these few. Enjoy!
