Author Notes: Here’s a light, healthy, easy-to-prepare torta with a  Southwest flair.

Did you know that walnuts are one of the healthiest foods you can eat?  Walnuts are the only nut that contain a significant amount of omega-3 fatty acids. No other nut even comes close.  Eating a handful of walnuts every day is one small step you can take to protect your heart.  The U.S. Food and Drug Administration even approved a qualified health claim for walnuts, the first ever for a whole food.

Ingredients: 1 1/4 cups yolk-free egg product (or 8 eggs)
1/4 cup flour
1/2 teaspoon baking powder
1 cup fat-free cottage cheese
1/2 cup grated reduced-fat cheddar cheese
1/2 cup chopped walnuts, roasted if desired
1/4 cup diced mild green chilis
Instructions:

Pour egg product into large bowl. Sift combined flour and baking powder over egg. Beat until completely blended. Beat in cottage and cheddar cheese, walnuts and chilies. Pour into prepared pan. Bake in preheated oven about 35 minutes until puffy and set and knife inserted slightly off center comes out clean.

Nutrition information per serving:
249 calories, 23g protein, 13g carbohydrates, 2g fiber, 12g total fat, 3g saturated fat, 13mg cholesterol, 469mg sodium.
