This recipe, by Carmel Roberts of Austin, Texas was the 2nd prize winner (traditional category) in our Meatloaf Madness Recipe Contest. Believe it or not, its creator was only 18 years old at the time she won this contest. Since this is Carmel's recipe, I'll let her take it from here. Meatloaf Madness 2nd Prize -- Traditional Carmel Richards - Austin, Texas "I am only 18, so I guess it is kinda odd that I have my own meatloaf recipe. I like to cook, and my mother asked me to make meatloaf "real quick" one day. I just tossed in some stuff that looked good, and put it in the oven. I really couldn't have cared less about whether it would taste good, but everyone liked it, and now my meatloaf scarfing brother will only eat meatloaf if I make it. By the way, the extra ketchup can be poured on top of the meatloaf after it has baked for 20 minutes. Extra serving suggestions include topping a cooked slice of meatloaf with american or pepper jack cheese and melting under the broiler. Enjoy!" |
| Ingredients: |
2 pounds ground beef 2 cups chopped white or yellow onion 1 can (14 ounces) diced tomatoes and green chili OR 1 cup chopped green bell pepper 5 eggs 5 slices of bread, soaked with water 1/4 cup ketchup 1/4 cup mustard 2 tablespoons hot sauce 1 dash of onion powder salt and pepper to taste more ketchup |

Preheat oven to 400°. Simply "dump" all ingredients in into a bowl and "moosh" together with your hands! Form the meat into a "loaf" and place in a glass baking pan. Bake for approximately 45 minutes. or until cooked through. |
