The best pressure cooker book we’ve seen yet! The subtitle of this book says it all: Everything You need to Know About Pressure Cookers with Hundreds of Quick and Easy Recipes. Author Vickie Smith, AKA Miss Vickie of MissVickie.com, a popular website about pressure cooking and pressure cooker recipes, has compiled the lion’s share of her knowledge on the subject into this huge book. You’ll turn to it over and over again both for techniques and how to’s, as well as for easy and delicious recipes that take no time to prepare. Those new to and/or intimidated by pressure cooking won’t be with this invaluable guide at your side. Included is a buying guide to modern pressure cookers, step-by-step pressure cooker instructions, pressure cooker safety, basic and advanced pressure cooking techniques, common mistakes and trouble shooting, adapting recipes for the pressure cooker, and tips and tricks. That’s in addition to the nearly 400 pressure cooker recipes (every one we’ve tried in our test kitchens has been excellent). As you can see from the chapter list below, Miss Vickie covers a lot of territory with these recipes. Your pressure cooker will get a work out. Modern pressure cookers bear little resemblance to the hissing rattling scary contraptions of our grandparent’s generation. Today’s pressure cookers are safe and easy to use. As food cooks in less time, more nutrients are retained, and less energy is used in cooking, making pressure cooking one of the “greenest” practices you can use in your kitchen. Chapters Include: The History of the Pressure Cooker; The Benefits of Modern Pressure Cookers; How Does It Do That Thing It Does?; Pressure Cooking Techniques; A Buyer’s Guide to Modern Pressure Cookers; Step-By-Step Pressure Cooker Instructions; Pressure Cooker Safety; Getting, Keeping, and Releasing Pressure; Basic Pressure Cooking Techniques; Advanced Pressure Cooking Techniques; Accessory Items; Pressure Cooking Cleaning and Maintenance; Common Mistakes in Pressure Cookery; Adapting Recipes in the Pressure Cooker; Test Drive Your pressure Cooker; Water and Other Liquids; Troubleshooting; Tips and Tricks; The Best-Kept Cooking Secret; The Best Cuts of Meat for Pressure Cooking; Dried Beans, Peas, and Legumes; Pressure Cooking Pasta; Pressure Cooking Time Charts; Manufacturers and Suppliers.
