Like all the books in the Culinary Institute Of America's (CIA's) series, this one is of exceptional quality. The instructions are clear and concise, the photos helpful, and the recipes are tempting and delicious.
Don't let the fact that this book comes from the nation's (if not he world's) premier culinary academy intimidate you. Most of the recipes are easy to accomplish, and any unusual or difficult techniques (and there aren't many) are clearly explained and illustrated. Bottom line -- even beginner grillers will be able to achieve impressive results. The recipes cover a broad spectrum of ethnic styles, giving you an eclectic collection to choose. In addition to grilling, the book delves somewhat into slow cooked barbecue and smoking. You'll be sure to turn to this book over and over again when cooking outdoors. It is one of the best overall books we've seen on the subject. |
