Most American's familiarity with Black Forest Cuisine begins and ends with the famous cake of the same name. Which is not a shabby place to start, and to be sure this book has a fabulous recipe for Black Forest Cake with detailed step-by-step full color instructions. But beyond cake, most Americans would generally find this continental cuisine with a German accent most appealing. Chef Walter Staib's inspired and eclectic collection of traditional recipes of his homeland updated to reflect today's culinary tastes and seasonings is a wonderful way start enjoying this unique blending of European flavors. I had never been a particular fan of German cuisine, but then I never experienced German cuisine like this before. Staib's recipes use fresh ingredients that burst with bright flavor and never seem overly heavy. This is one of the most well produced, written, and edited books to cross our desks in some time. Along with the more than 150 recipes, Chef Staib shares memories of his family home. There are recipes here for every day occasions as well as special events. For a chef of such renown and sophistication, his book is surprisingly user friendly with clear and easy to follow instructions and usually easy to find ingredients. Most recipes are not difficult to execute - those that do use tricky or potentially unfamiliar techniques come with step-by-step photo instructions. In fact, beautiful full color photographs accompany most recipes.
