This is a terrific book for low carbers, diabetics or hose who are insulin resistant. You'll find over 275 recipes and unlike many low carb collections, these recipes sound really delicious.
Keep in mind these are low, not no, carb recipes. However, the author always uses ingredients that have a low glycemic index, like fresh fruits and whole grains, so the recipes have healthy carbs that aren't likely to make your insulin levels spike. Stephens always adds extra fiber to recipes wherever possible. The book starts with a basic introduction to the benefits of controlling your carbohydrates and following a low glycemic dietary lifestyle, including a glycemic index, shopping tips, a discussion of alternative sweeteners, nutritional information, and diabetic food exchanges. The large format size make it easy to read. Author Lynn Stephens dropped from a size 12 to a 6/8 using these recipes, and has kept the weight off for more than 6 years. Her healthy approach to a controlled carbohydrate diet has lead to the creation of some really wonderful recipes -- serve them to friends and family, they'll never know they're helping you stay on your diet! |
