Review: You don't have to be diabetic to enjoy the convenience of slow cooker cooking. But then, you don't have to be diabetic to gain health benefits from eating a diabetic diet as recommended by the America Diabetes Association either. That's right, a diet that's healthy for those with diabetes is also a healthy diet for the rest of us - a balanced low fat, high fiber diet featuring a wide variety of healthy foods. So, it goes to reason, that all busy cooks, not just those preparing wholesome meals for diabetics can benefit from the simple, time saving recipes in these pages.

The author collected the recipes from folks all over the country. They provide maximum flavor and nutrition for a minimum preparation time investment. Many of today's slow cookers come with built in timers (if not you can buy a timer that turns appliances on and off at designated times), so you can throw ingredients in the slow cooker in the morning, set the timer and come home to a hot meal in the evening.

This is not gourmet fare, but rather, simple dishes that will appeal to the whole family. Interspersed between the recipes are health and fitness tips, some specifically for diabetics, but most apply to everyone who wants to live a healthier lifestyle. A week of suggested menus makes planning for healthy eating easy, as does the fact that each recipe includes diabetic exchanges as well as nutritional information for calories, total fat, saturated fat, polyunsaturated fat, monosaturated fat, cholesterol, sodium, total carbohydrate, dietary fibers, sugars and protein.

Recipe chapters include: Main Courses - Beef, Pork, Chicken, Turkey, Bean and other Main Courses; Soups; Vegetables; Desserts; Appetizers, Snacks and Spreads; Beverages; Breakfast Dishes; Breads; Low Sodium Mixes and Sauce. Sample Recipes from the Fix-It and Forget-It Diabetic Cookbook
