Here’s another entry in Rio Nuevo Publisher’s Cook West ingredient series. This book, like all in the series, takes a look at a popular cooking ingredient, with an American Western flair. The results are handy little collections of tantalizing easy to prepare recipes that celebrate the flavors and aromas of the American West. Each of the books in the Cook West series, and this is no exception, are beautifully produced and illustrated with full color photos. There is always an introductory chapter giving the history and popular uses of the ingredients, as well as tips for working with it. While we Americans typically think of chocolate in terms of desserts, many Southwestern, central and South American recipes use it for savory dishes too. This collection represents both sides of chocolate admirably.
