Here's a quick and easy pasta dish with crisp light citrusy flavors.

Did you know that walnuts are one of the healthiest foods you can eat?  Walnuts are the only nut that contain a significant amount of omega-3 fatty acids. No other nut even comes close.  Eating a handful of walnuts every day is one small step you can take to protect your heart.  The U.S. Food and Drug Administration even approved a qualified health claim for walnuts, the first ever for a whole food.

Ingredients: 10 ounces extra-wide curly “no yolk” noodles
2 pounds broccoli, steamed (florets and peeled stems, cut in 1/2” slices)
1/2 cup chopped California walnuts
1 tablespoon olive oil
juice of one lemon
juice of 1/2 orange
grated zest of one lemon
1/2 teaspoon ground pepper

Optional:
1/2 cup diced smoked turkey, low-fat chicken sausage, or seasoned tofu
Instructions:

Cook noodles al dente, about 5 minutes.

Steam broccoli until tender, about 3-5 minutes.

Heat olive oil over medium-high heat and add walnuts. Sauté for about 1 minute.

Combine noodles and broccoli (and turkey, chicken or tofu if using). Add walnut-oil mixture and toss well. Add citrus juices, zest, and pepper and toss well again.

Nutrition information per serving:
510 calories, 21g protein, 78g carbohydrates, 10g fiber, 15.7g total fat, 1.9g saturated fat, 0mg cholesterol, 101.6mg sodium, 1.7g omega-3, 6g omega-6.
