| Author Notes: | Iced tea has long been the preferred drink for refined ladylike refreshment, but it can get a little dull. This version, infused with chunks of mango and chopped vanilla bean, is a refreshing alternative that beats the pants off of lame bottled teas flavored with fake flavor extracts. |

6 English Breakfast tea bags
2/3 cup sugar 1 vanilla bean 2 mangoes, peeled, pitted, and cut into large cubes 1 cup mango nectar |
| Instructions: |
Makes 8 Servings, 1 Cup Each Bring 8 cups of water to boil, then pour over the tea bags in a large bowl. Infuse the tea until it’s a bit stronger than usual, then remove the tea bags and let the tea cool. In a medium saucepan, combine the sugar with 1/4 cup water. With a small sharp knife, split the vanilla bean lengthwise. Scrape out the seeds and add them to the sugar mixture. Roughly chop the vanilla bean and add it to the pot as well. Bring the sugar mixture to a boil, reduce the heat, and simmer, stirring occasionally, until a clear syrup flecked with vanilla beans forms. Set the vanilla syrup aside to cool. Strain the vanilla syrup through a sieve to remove the vanilla chunks (the pretty seeds remain in the syrup). Mix the vanilla syrup, cubed mango, and mango nectar with the cooled tea. Transfer the tea to a pitcher and chill before serving over ice. |
