Zucchini with Sour Cream Topping

Author Notes: In addition to lots of great small space recipes, the book is especially great for novice RVers, new to packing and cooking in their rigs.
Ingredients: 2 zucchini

For topping:
2 parts sour cream
1 part Parmesan cheese

Garnish:

paprika
Instructions: Trim stems off zucchini. Bring water to a boil in a large pot. Add zucchini, cover and boil until tender -- about 10-15 minutes. Drain. Cut zucchini in half lengthwise.

Place, cut side up, on a baking sheet. Lightly season cut side with salt and pepper.

Combine sour cream with Parmesan cheese. Spread on zucchini. Sprinkle with paprika, then broil until topping is hot.
