Author Notes: This recipe is part of an article April did for us about incorporating new and exotic vegetables and fruit into your low carb diet in order to resist boredom.
Ingredients: 1 average 6" diameter rutabaga, peeled
olive oil
Instructions:

Slice rutabaga into 1/2" thick disks. With sharp knife, starting at one edge, slice across each disk to make thin fries. In a single layer, sauté fries in hot olive oil in a large fry pan until just beginning to brown. Drain on paper towels and salt lightly. Serve hot.
