Author Notes: Celery is most often served raw as a crudite or in salads, but this parmesan topped cooked version makes a surprisingly delicious side dish.
Ingredients: 3 cups celery, cut on the diagonal
1 tablespoon butter
1/3 cup fresh parsley, chopped
1/3 cup Parmesan cheese, grated
salt and pepper to taste
Instructions: Cook celery in a small amount of water, or even better, use a steamer to steam it until crisp-tender, about 5 minutes. Drain then return celery to saucepan and stir in butter. Cover and cook over low heat for about 2 minutes. Remove from heat and toss with chopped parsley and grated parmesan. Season with salt and pepper to taste. Serve immediately.
