Author Notes: Sweet carrots are delicious, but did you know that that cooked carrots actually contain more antioxidants than fresh? Cooked carrots do not lose their nutritional value, and may contain more health-giving properties than crunchy raw carrots, according to University of Arkansas researchers. So cook your carrots and eat up!

Ingredients: 1 pound baby carrots
1 tablespoon butter
1 tablespoon honey
1/2 teaspoon salt
1/4 teaspoon cayenne
1 tablespoon minced parsley
Instructions:

In large pot of boiling water, cook carrots until crisp-tender, about 8 minutes. Drain.

In large skillet, over medium-high heat, melt butter. Stir in honey, salt and pepper and cayenne. Add carrots, cook stirring 5 minutes until heated through. Stir in parsley.
