Author Notes: Kathy, a reader in Washington state shared this simple but delicious recipe with former Camper's Corner editor, the late Bob Carter.  The prepared beets are also good when cold or added to green salads. According to Kathy, "This is the only way my 10 and 12 year-old boys will eat beets. They think they're like candy!" We suggest you roast a few extras for later use. Multiply ingredients by number of people being served.
Ingredients: 1 beet per person
small pat butter per serving
Instructions: Wash beets, dry, and trim top. Make small X in top of beet (where the greens were.) Place on a sheet of aluminum foil and add butter pat. Wrap in one to two layers of and put on coals of fire or on barbecue. Turn every 10 minutes or so. A medium sized beet will take approximately 45 minutes to bake. Remove from coals, open packet slowly to allow steam to escape.
