Good old fashioned egg salad, is a great way to use leftover Easter Eggs, but it's a nice lunch surprise anytime of year. I think people forget about how good it is. Use this salad for a sandwich spread, stuff it into a tomato or celery, serve on crackers, or use your imagination.

Ingredients: 6 hard boiled eggs, peeled
1/2 cup chopped celery
1/3 cup chopped scallions
4 tablespoons mayonnaise
1 teaspoon Dijon mustard
1/4 teaspoon Worcestershire sauce
salt and pepper to taste
Instructions:

Makes 4 Sandwiches or Stuffed Tomatoes

Mash eggs and mix all ingredients together until well mixed.
