| Ingredients: |
1/2 cup lemon juice, divided
1 (8-ounce) package elbow macaroni 1 cup chopped tomato 1 cup green onions (scallions), thinly sliced 1 cup thin slices halved cucumber 1 cup whole kernel corn (frozen, fresh or canned) 1/3 cup nonfat plain yogurt 2 tablespoons light mayonnaise 1 1/2 tablespoons lime juice 1 teaspoon minced garlic salt and pepper to taste |
| Instructions: |
Cook macaroni according to package directions, drain and transfer to a large bowl. Add tomato, green onions, cucumber, and corn.
In a separate bowl, blend basil, yogurt, mayonnaise, lime juice, and garlic. Toss dressing with macaroni mixture, mixing well. Season with salt and pepper. Cover and refrigerate. Nutrition information per serving: |
