Servings: 4
Author Notes: This unusual pasta salad has all the flavors of warm German-style potato salad, without the potatoes! It's always a hit.
Ingredients: 2 cups wide egg noodles, cooked and drained
4 strips bacon
1/2 cup onion, finely diced
1 tablespoon sugar
1 tablespoon flour
2 tablespoons fresh or dried parsley
1/4 teaspoon ground mustard powder
1/2 cup water
1/4 cup cider vinegar
1 cup celery, finely diced
1/4 teaspoon salt
Instructions: Cook noodles, drain and set aside. Cook bacon until crisp, crumble and set aside. Sauté onion in bacon grease, stir in sugar, flour, mustard and salt. Add water and vinegar and cook, stirring constantly, until thick and bubbly. Add drained noodles to skillet and stir in parsley and celery. Cook to heat through. Sprinkle with bacon and serve.
