Strawberry Poppyseed Dressing: 1 cup sliced fresh strawberries 1/4 cup red wine vinegar 1 tablespoon agave syrup (nectar)(or 1 tablespoon + 1 teaspoon Splenda® or alternative sweetener) 1 teaspoon poppyseeds 1/2 teaspoon dry mustard 1/2 cup canola oil Salad: 5 cups torn fresh spinach, washed and dried 1 1/2 cups sliced fresh strawberries 1 cup sliced celery (about 2 ribs) 2 spring onions, thinly sliced |

Makes 4 Servings of Salad and 1 Cup Dressing Blend all dressing ingredients with a hand blender, blender or food processor. Refrigerate. Place the salad ingredients in a serving bowl. Add about half the dressing just before serving and toss. Refrigerate remaining dressing for later.
