Author Notes: A perfect pleasure while watching your carbohydrates! Try this salad with grilled fish or your favorite chicken dish.
Ingredients: Strawberry Poppyseed Dressing:
1 cup sliced fresh strawberries
1/4 cup red wine vinegar
1 tablespoon agave syrup (nectar)(or 1 tablespoon + 1 teaspoon Splenda® or alternative sweetener)
1 teaspoon poppyseeds
1/2 teaspoon dry mustard
1/2 cup canola oil

Salad:
5 cups torn fresh spinach, washed and dried
1 1/2 cups sliced fresh strawberries
1 cup sliced celery (about 2 ribs)
2 spring onions, thinly sliced
Instructions: Makes 4 Servings of Salad and 1 Cup Dressing

Blend all dressing ingredients with a hand blender, blender or food processor. Refrigerate.

Place the salad ingredients in a serving bowl. Add about half the dressing just before serving and toss. Refrigerate remaining dressing for later.

Per 2 tablespoons dressing:
Total Fat (g): 15; Protein (g): 0; Total Carbohydrates (g): 4; Dietary Fiber (g): 0; 138 calories
Food Exchanges: Fat: 21/2

1 serving salad (without dressing):
Total Fat: trace; Protein (g): 2; Total Carbohydrates (g): 6; Dietary Fiber (g): 3; 32 calories
Food Exchanges: Vegetable: 1/2, Fruit: 1/2
