Author Notes: This pasta is simple to make and has the classic Italian flavors of fresh tomatoes and basil. It makes a perfect quick summer meal. The riper and sweeter your tomatoes, the better this dish will be.
Ingredients: 2 1/2 pounds fresh tomatoes, chopped (preferably Roma tomatoes)
3-4 cloves garlic, minced
1 cup fresh basil, coarsely chopped
3/4 pound fresh mozzarella cheese, cubed
3 tablespoons olive oil
1 pound pasta (penne or rigatoni), cooked al dente
4 tablespoons Parmesan cheese
salt and pepper to taste
Instructions: Combine all ingredients except pasta and Parmesan and toss to mix (can be prepared ahead of time up to this point).

Place hot pasta in a serving bowl. Top with the tomato and cheese mixture and the Parmesan cheese. toss to mix.  Serve.
