Author Notes: Here's a healthy bean dip - serve with pita bread or raw veggies.
Ingredients: 1 can (15 1/2 ounces) Great Northern beans, drained and rinsed
1 tablespoon extra virgin olive oil
2 tablespoons freshly squeezed lemon juice
2 1/2 teaspoons minced garlic
1/4 teaspoon salt
1/4 teaspoon pepper
Instructions: Serving Size: 1/4 cup
Volume: 2  cups
Prep Time: 5 Minutes
Total Time: 5 minutes

Place the beans on a bowl of a food processor.  Add the remaining ingredients and pulse until smooth.  Scrape the bowl as necessary to incorporate ingredients.  Serve this immediately, or cover and refrigerate for up to 2 days.
