Author Notes: This recipe is a quick, frugal, and tasty way to use up leftovers.
Ingredients: 1/2 pound ground beef
1 large onion, chopped
1 large green pepper, chopped
1 (16 ounces) can tomatoes, cut
1/2 cup cup regular rice, uncooked
2 teaspoons chili powder
2 teaspoons salt
1/8 teaspoon pepper
Instructions:

Preheat oven to 350°F.

In large skillet, brown beef, onion, and green pepper. Drain fat. Add tomatoes, rice, chili powder, salt and pepper. Heat through. Pour into 2 quart casserole. Cover and bake for 1 hour.
