| Author Notes: | What could be better than fresh baked cobbler while sitting around a campfire? Dann, a reader in Iowa shared this recipe with former Camper's Corner editor, the late Bob Carter. Since Bob admitted to enjoying being a lazy guy, he said this recipes was right up his alley. If you're in an RV and have room for ice cream, it's great on top of the cobbler. If not, run into town and add a few scoops! |
| Ingredients: |
2 small boxes of Jiffy yellow or chocolate cake mix (see instructions below)
2-3 cans of fruit pie filling (3 14-ounce cans or 2 28-ounce cans ) 1 preheated Dutch oven aluminum foil to line Dutch oven |
| Instructions: |
Serves 8 - 10 Preheat Dutch oven over coals until warm but not hot. Pour cans of fruit filling into Dutch Oven. Dann has had success with apples, cherries, peaches and fruit cocktail , but don't be afraid to experiment with your own personal favorite. Spread filling so it covers the bottom of the Dutch oven evenly. Sprinkle Jiffy mix on top. Cover Dutch oven and cook over hot coals for about 20-30 minutes. Use more time if your coals are too cool; less if used with mesquite. Uncover and serve. Top with ice cream, if desired. Use white cake mix with apples and top with butter and cinnamon. Use chocolate cake mix over cherries after adding a bit of water first for a Black Forest cobbler. |
