Author Notes: While the collection of recipes in this book for the most part is hardly authentic cowboy fare, it is fun for retro food and 50’s nostalgia buffs. This book, like all the books in Collector’s Press’ Retro series, is designed in classic 50s retro style with full color artwork and photographs. And while some of the fare might be considered “cowboy cooking,” the rest still has that retro 50s diner feel that so fits the overall design and feel of the book. Campers of all generations, however, will appreciate the wide variety of Dutch oven recipes, along with detailed instructions and tips for using a Dutch oven.
Ingredients:

Cake:
2 eggs
1 cup sugar
1 teaspoon vanilla
1 cup cake flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk
2 tablespoons butter

Icing:
3/4 cup brown sugar
1/2 cup butter, melted
1/4 cup cream
1 cup coconut

Instructions:

Preheat oven to 350ºF. Butter an 8 X 8 inch baking pan.

Prepare Icing:
Combine all ingredients in a small bowl and blend well. Frost the hot cake as instructed below.

Prepare Cake:
Combine eggs, sugar, and vanilla; beat until thick. Sift flour, baking powder, and salt; add to egg mixture. Heat milk and Butter to boiling; add to mixture. Bake for 30 to 40 minutes. Remove from oven, spread frosting on cake, and return to hot oven or broiler to brown.
