| Author Notes: | These classic Italian almond flavored macaroons are wonderful served by themselves with coffee or espresso, but they also make crumbs for crusts or can be used as an ingredient in other recipes. Just out of the oven these cookies are crispy on the outside and chewy on the inside, after the cool they become crunchy all around. |
| Ingredients: |
3 cups blanched slivered almonds 1 1/2 cups sugar 3 egg whites 1 1/2 teaspoons almond extract |
| Instructions: |
Pre-heat oven to 300° F. Line a cookie sheet with parchment paper.
Grind almonds to a fine meal in a food processor. Add the sugar and process for another 15 seconds. Add egg whites and almond extract and continue to process until a smooth dough forms around the blade. Place rounded teaspoonfuls of dough on prepared cookie sheet, at least 1/2 inch apart. Bake for 20 to 30 minutes or until golden. Allow cookies to cool completely on the parchment before removing. Store in an airtight container. |
