Author Notes: Peppers and scallions team with walnuts and cheese in this light frittata that's perfect for breakfast, or a light entree.

Did you know that walnuts are one of the healthiest foods you can eat?  Walnuts are the only nut that contain a significant amount of omega-3 fatty acids. No other nut even comes close.  Eating a handful of walnuts every day is one small step you can take to protect your heart.  The U.S. Food and Drug Administration even approved a qualified health claim for walnuts, the first ever for a whole food.

Ingredients: 1/3 cup each julienne yellow, red and green peppers
1/3 cup chopped scallions
1/2 cup chopped walnuts
1 1/2 cups egg substitute
2 tablespoons nonfat yogurt
1 tablespoon Asiago cheese or Parmesan cheese
Instructions:

Preheat oven to 350ºF.

Sauté peppers, scallions and walnuts in an oven-proof skillet. Spray the skillet with nonstick cooking spray before sautéing the vegetables.

Beat egg substitute, add yogurt and pour mixture over vegetables in skillet. Stir and cook over medium heat until eggs begin to set. Sprinkle cheese over top and bake  for 8-10 minutes or until eggs are well set. Cut into wedges and serve.

199 Calories, 14.8g Protein, 6.3g Carbohydrates, 2g Fiber, 13.6g Total fat, 1.9g Saturated fat, 2.7mg Cholesterol, 190mg Sodium, 1.5g Omega-3, 7.1g Omega-6.
