Peppers and scallions team with walnuts and cheese in this light frittata that's perfect for breakfast, or a light entree. Did you know that walnuts are one of the healthiest foods you can eat? | Ingredients: |
1/3 cup each julienne yellow, red and green peppers 1/3 cup chopped scallions 1/2 cup chopped walnuts 1 1/2 cups egg substitute 2 tablespoons nonfat yogurt 1 tablespoon Asiago cheese or Parmesan cheese |
| Instructions: |
Preheat oven to 350ºF. Sauté peppers, scallions and walnuts in an oven-proof skillet. Spray the skillet with nonstick cooking spray before sautéing the vegetables. Beat egg substitute, add yogurt and pour mixture over vegetables in skillet. Stir and cook over medium heat until eggs begin to set. Sprinkle cheese over top and bake for 8-10 minutes or until eggs are well set. Cut into wedges and serve. Nutrition information per serving: |
