Author Notes: Carol's books are a boon to those dealing with food allergies and intolerances, especially those needing to cook without wheat, gluten, dairy, eggs, refined sugars or yeast. 
Ingredients: Gluten-Free Flour Mix es

Rice Flour Mix (#1)
3 cups brown rice flour
1 1/4 cups potato starch or cornstarch
3/4 cup tapioca flour

Bean Flour Mix (#2)
1 2/3 cups garbanzo / fava bean flour*
2 cups potato starch or cornstarch
2/3 cup tapioca flour
2/3 cup sorghum flour

*Available from Authentic Foods, Bob's Red Mill, Ener-G Foods, Gluten-Free Pantry, or Miss Roben's
Instructions:

Each Mix Makes 5 cups

Choose the mix that best suits your diet's needs. Mix all ingredients together, use in place of wheat flours.
