In the 10 years or so that I have been running this website and reviewing cookbooks, I'm surprised to day that this is the first book dedicated entirely to pasta that's crossed my desk. And as pasta is one the world's favorite, not to mention most versatile, foods, there is undoubtedly a need for it. Authors Johanne Killeen and George Germon, the James Beard Award-winning owners of Al Forno in Providence, Rhode Island approach their subject from an Italian point of view. Traditional favorite pasta dishes are all well represented here, but you'll also find some creative new uses for pasta too. Most recipes are quick and easy to prepare. Most of the recipes are, as the title says, for pasta toppings. As far as preparing your own fresh pasta from scratch, the book includes one master recipe, with some interesting variations. One criticism it's that a majority of recipes are richer (read higher in fat, butter, cheeses, etc.) than what I regularly want to eat. In addition to recipes the chapter on pasta tips will make you an expert preparing perfect pasta. Each dish is accompanied by suggestions for rounding out the meal and using leftovers - if there are any. |
