  1. Place the tortillas in the microwave for 15 seconds or put them in a 350 degree F oven for 30 seconds to make them pliable.
  2. Lay out the warm tortillas and evenly distribute the ham, cheese, green onions and chili powder among them.
  3. Spray a skillet with cooking spray and get it hot over medium-high heat. Carefully fold two of the quesadillas over to make half moons and cook them, 3 minutes on each side. Keep warm in the oven while you make the other two.

Italian chicken wonton cups

A great way to use leftover chicken, this recipe can be made in less than 30 minutes and packs a lot of flavor.

Ingredients:

  • 4 tablespoons olive oil
  • 1 pound chicken, cut into strips
  • 1 packet spaghetti sauce seasoning
  • Cooking spray
  • 8 wonton wraps

Directions:

  1. Preheat your oven to 350 degrees F.
  2. Put the olive oil into a skillet and let it get hot over medium-high heat.  Add the chicken and the spaghetti sauce mix. Sauté the chicken until it is cooked on all sides and put into a food processor to shred.
  3. Once the chicken has reached the consistency you would like (slightly larger than chicken salad is best), remove from the food processor.
  4. Spray a muffin pan with cooking spray and line each hole with a wonton wrap. Spray a little more cooking spray over each wrap. Bake for 15 minutes or until crispy.
  5. When you are ready to serve, fill each cup with chicken and arrange on a platter.
