Who doesn't love getting roses on Valentine's Day? So, this year, why not try to make an entire meal from roses using rosewater?

If you have never had rosewater, it's exactly what it sounds like: water that has been kissed with a little sweetness, a little citrus, and a little floral bouquet by roses. It's basically clear and its taste and smell is subtle, but it can make dishes extraordinary.

Here is a complete meal that showcases romantic rosewater.

Rosewater Lemonade

No rosewater meal would be complete without a drink. This lemonade can be served as is or add a shot of citrus rum to make it an adult beverage.

Ingredients:
  • 2 tablespoons 100 percent pure rosewater extract
  • 2 teaspoons lemonade mix
  • 10-ounces lemon-lime soda
  • 4 strawberries, sliced

Directions:
  1. Put a tablespoon of rosewater extract into two glasses; add half the lemonade mix and soda into each glass; top with strawberries.

Berries in Rosewater

What better way to get the evening started than with a light bowl of berries flavored with rosewater? This is one of two dishes that will use rosewater syrup, the other being our rosewater granita dessert.

Ingredients:

To make the syrup:
  • 2 cups of sugar
  • 1 cup water
  • 2 tablespoons 100 percent pure rosewater extract
To make the dessert:
  • 1 cup of mixed berries

Directions:
  1. Mix all of the ingredients and bring them to a boil over medium-high heat; once the water is boiling, turn the heat off, the syrup will get thick.
  2. To finish the starter, pour the syrup over the berries.

Rosewater Soup

Peaches are stewed in rosewater as the basis of this soup. It is then rounded out with ground almonds for body and flavor. Serve with toasted brioche or a sweet bread.

Ingredients:
  • 1 cup fresh peaches, peeled and sliced
  • 2 cups 100 percent pure white grape juice (no cocktails)
  • 3 tablespoons 100 percent pure rosewater extract
  • 1 cup Marcona almonds, crushed
  • 1/4 cup red grapes, halved

Directions:

  1. Put the peaches, grape juice, and rosewater into a saucepan and bring it to boil over medium-high heat; once the juice is boiling, lower the heat to medium and continue cooking until the peaches get soft.
  2. Pour the soup into a blender and blend until smooth.
  3. Ladle the soup into bowls and top with almonds and red grapes.

Rosewater Chicken Salad

This salad mixes greens with noodles that have been boiled in rosewater. Citrus baked chicken tops the salad and gives it a little body.

Ingredients:
  • 3 tablespoons 100 percent rosewater extract
  • Salt
  • 8-ounces spaghetti
  • 2 chicken breasts
  • Cooking spray
  • Pepper
  • Juice of 2 oranges
  • 1 Romaine heart, sliced
  • 1/4 rice wine vinegar
  • 1 tablespoon sugar
  • 1/2 olive oil

Directions:
  1. Preheat the oven to 350 degrees F.
  2. Bring a pot of water to boil and add the rosewater and salt to taste; cook the spaghetti according to package directions; set aside to cool.
  3. While the pasta is cooking, put the chicken breasts onto a greased cooking sheet and sprinkle with salt and pepper, then cover with the orange juice; bake for 22 minutes, or until cooked all the way through.
  4. When the chicken is ready, mix the pasta with the sliced Romaine heart. In a separate bowl, mix the rice wine vinegar, sugar, and a pinch of salt; quickly whisk in the olive oil to make a vinaigrette and pour that over the noodles and Romaine.
  5. Top the salad with chicken and serve.

Strawberry and Rosewater Granita on Chocolate

The other use for granita syrup: This dessert will take several hours to make, but it will be refreshing and the perfect way to end the night.

Ingredients:
  • 1 recipe of rosewater syrup (see above)
  • 8-ounces strawberries, mashed
  • Juice of 1 lime
  • 1 cup prepared chocolate pudding

Directions:
  1. Add the mashed strawberries and lime juice to the syrup and put it in the freezer. Come back in 1 hour and stir the syrup. Continue doing this for 6 hours, or until you have something that looks like flavored ice.
  2. When you are ready to serve dessert, put the pudding in a bowl, then top with the granita.
