Jau gok, also known as potstickers, are a traditional Chinese New Year food eaten for all 15 days of the celebration because they are rumored to bring financial fortune. They are simple to make and can be filled with almost anything, though given the Chinese people’s general love of pork, ground pork and green onions are one of the most popular fillings.

Perhaps even better than the prosperity, though, is just how easy they are to make. You can buy potsticker wraps at the store, then all you need to do is make the filling, stuff the wraps, boil, and you are done.

Jau Gok (Potstickers)

This recipe uses a very simple pork filling. There is also a recipe for a vinegar-soy dipping sauce to go along with them.

Ingredients:

For the Jau Gok:
  • 2 pounds ground pork
  • 2 bunches green onions, greens only, sliced thin
  • 1 tablespoon ground ginger
  • 1 tablespoon oyster sauce
  • 1 egg
  • 1 package potsticker wrappers
  • Salt
For the sauce:
  • 1 cup soy sauce
  • 1/2 cup rice wine vinegar

Directions:

  1. In a skillet over medium high heat, add the ground pork, green onion greens, and ginger; cook the ground pork until all traces of pink are gone, then add the oyster sauce and mix well; take off the heat.
  2. Beat the egg with one tablespoon of water to make an egg wash.
  3. To make the potstickers, take a wrap and cover half of its outer edge with egg wash; then put a teaspoon of filling in the middle and fold the wrapper over; pinch the edges tightly; repeat until the filling is gone.
  4. When you are ready to cook the potstickers, get a large pot of well-salted water boiling and add the potstickers 6 to 8 at a time; cook until they float to the top.
  5. To make the dipping sauce, combine both ingredients and stir.
