Ingredients:
- 2 tablespoons olive oil
- 1 onion, finely diced
- 2 carrots, finely diced
- 4 cloves garlic, minced
- 2 pounds meat* (see note above)
- 1 egg
- 2 cups Panko
- 2 tablespoons oregano
- 1 tablespoon black pepper
- 1, 14.5-ounce can tomato sauce
- 1 tablespoon brown sugar
- 1 tablespoon garlic powder
- 1 teaspoon red wine vinegar
- Cooking spray
Directions:
- Preheat your oven to 350 degrees F.
- In a skillet over medium-high heat, sauté the onion, carrots, and garlic until the onions are translucent; take them off the heat and let them cool.
- In a large mixing bowl, mix the sautéed vegetables, meat, egg, Panko, oregano, and black pepper (you are probably going have to use your hands). In a separate bowl, mix the tomato sauce, brown sugar, garlic powder, and vinegar.
- Spray two loaf pans with cooking spray and add half the mixture to each. Bake for 30 minutes; add the tomato mixture and bake another 15 minutes, or until the meatloaf is cooked all the way through.
