Lasagna: Healthy and Not-So-Healthy Recipe Variations

Healthy lasagna and less healthy lasagna recipes. Here are two delicious recipes for lasagna whether you're dieting or not.
Maybe your favorite comfort food is lasagna: layers of savory meat, gooey cheese, and rich tomato sauce. If you want to get fit, however, and you are willing to go without a little of that cheese, you can have your (pasta) bake and eat it, too. Of course, if you made a different New Year's Resolution, get ready to pile on the cheese, meat, noodles, veggies, and the sausage too!

Healthy Lasagna

Healthy lasagna looks a lot like regular lasagna, only there is less cheese, fewer noodles and more veggies; also, the red meat has been replaced with ground turkey breast.

Note: This dish has a lot of ingredients, but that is only to increase the amount of veggies. Don't let the size of the list scare you. You may omit as many items as you want, or even get the veggies precut at a grocery store salad bar.

Ingredients:
  • 2 tablespoons olive oil (divided)
  • 16-ounces mushrooms
  • 1 green pepper, diced
  • 2 stalks of celery, sliced
  • 1 carrot, diced
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 pinch red pepper flake
  • 1 pound ground turkey breast
  • 1 tablespoon oregano
  • 1, 14.5-ounce can of tomato sauce
  • 1, 14.5-ounce can of diced tomatoes
  • Salt and pepper to taste
  • 8 basil leaves, sliced
  • 6 lasagna noodles
  • 1/2 cup skim milk ricotta
  • 1/2 cup skim milk mozzarella

Directions:
  1. Pour 1 tablespoon of olive oil into a skillet and get it hot over high heat; add the mushrooms and cook them until they turn brown; set aside.
  2. Put the other tablespoon of olive oil into the pan and reduce the heat to medium; add the green pepper, celery, carrot, onion, garlic, and red pepper flakes and cook until the veggies are soft; add the turkey and oregano; cook until the turkey is done all the way through.
  3. Add the tomato sauce and diced tomatoes and bring to a boil; add salt and pepper (to taste) and the basil; put on medium-low heat and let the sauce simmer while you cook the noodles.
  4. In a pot of boiling, well-salted water, add the noodles and boil them until they are fork tender.
  5. Finally, assemble the lasagna by putting a small layer of sauce in a 9 x 13-inch pan, then adding 3 noodles. Top the noodles with all of the sautéed veggies and the ricotta; add the second layer of noodles and top with the sauce and mozzarella cheese.
  6. Bake in a 350 degree F oven until the cheese is melted.

Lasagna the not-so-healthy way

This style of lasagna has some of the vegetables of the healthy version, but not nearly as many. Instead, this version is packed full of all sorts of meat and cheese.

Ingredients:

  • 4 spicy Italian sausages
  • Cooking spray
  • 1 package cream cheese
  • 1 pound ground pork
  • 1 pound ground hamburger
  • 2 tablespoons oregano
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 pinch red pepper flake
  • 1, 14.5-ounce can of tomato sauce
  • 1, 14.5-ounce can of diced tomatoes
  • Salt and pepper to taste
  • 12 lasagna noodles
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella
  • 1/2 cup shredded Parmesan

Directions:
  1. Preheat oven to 350 degrees F. Grease a small pie pan or a high-sided baking dish with cooking spray. Next, bake the sausages in the pan for 20 minutes, or until they are done. When they are cool, remove the sausage from its casing and crumble; set aside.
  2. Set the cream cheese out so that it can come to room temperature.
  3. In a skillet over medium-high heat, add the pork, hamburger, and oregano and cook until none of the meat is pink; set aside.
  4. In the same skillet, add the olive oil and sauté the onion, garlic, and red pepper flakes until the onion is clear, about 10 minutes; add the tomato sauce and diced tomatoes; bring to a boil and add salt and pepper, to taste. Let the sauce simmer on medium-low while you make the noodles.
  5. In a pot of boiling, well-salted water, add the noodles and boil them until they are fork tender. While the noodles are boiling, mix the cream cheese and ricotta.
  6. Assemble the lasagna by putting a small layer of sauce in a 9 x 13-inch pan, then adding 4 noodles; top the noodles with the ricotta mixture; add a second layer of 4 noodles and add the pork, hamburger, and sausage. Finally, add the last layer of noodles and top with the sauce, mozzarella cheese, and Parmesan.
  7. Bake in a 350 degree F oven until the cheese is melted.
