'Tis the season for cold winds, icy roads, and warm comfort food. When the snow is falling outside, there is absolutely nothing better than sitting down where it's nice and warm and digging into hearty, soul-satisfying comfort food. One particular cold day classic that nearly everyone has a recipe for is chili, but for the next blustery winter's day, why not kick it up a little bit?

This recipe takes traditional chili and adds the fun and flavor of chili dogs; however, because the dogs are actually in the chili, it is a simple dish to make that can be served with cheese, mustard, relish, onions or any other traditional chili dog toppings.

One Pot Chili Dogs

This is a simple, one dish meal that can be ready in about 30 minutes. None of the topping suggestions need to be cooked, so this dish really is perfect for cold school nights when everyone wants to eat quickly.

Ingredients:
  • 2 tablespoons olive oil
  • 2 onions, diced
  • 2 cloves garlic, minced
  • 1 jalapeño, sliced
  • 2 pounds ground beef
  • 2, 12.5-ounce cans diced tomatoes
  • 1, 12.5-ounce cans tomato sauce
  • 1 can dark beer
  • 1 cup beef stock
  • 1/2 cup chili powder
  • 1 teaspoon cayenne
  • 1 can black beans
  • 8 hot dogs, cut into 1-inch pieces

Topping Suggestions
  • Shredded cheddar cheese
  • Sliced green onions
  • Sour cream
  • Diced yellow onion
Directions:
  1. In a soup pot, add the olive oil and let it get hot over medium-high heat; add the onions, garlic, and jalapeño and sauté for about 5 minutes; add the ground beef and let it brown, about 5 to 10 minutes.
  2. Add the rest of the ingredients, except the hot dogs, and bring to a boil; reduce the heat to medium and simmer for 15 to 20 minutes. Finally, add the hot dogs and let them get hot. Serve with the suggested toppings or your favorites.
