When I was a kid homemade popsicles meant pouring the Kool-Aid flavor of the day into ice cube trays and waiting for the magic to happen. Today my grown-up palate demands flavors beyond Tropical Punch and Cherry and these popsicles fit the bill.

Here are a few popsicle tips to help you get started:
  1. Don’t rely on a recipe. Experiment with your favorite ingredients and flavors to create your own chilly concoctions.

  2. Taste as you go, especially if you’re adding fruit to your popsicles. The amount of sugar you’ll need will depend on the ripeness of the fruit.

  3. Add a splash of champagne, rum, or a liqueur in a complimentary flavor to  turn kid-friendly pops into adult treats.

  4. The number of pops you’ll yield from each recipe will depend on the size of your popsicle molds.

  5. Don’t have popsicle molds? No worries. Use small paper cups or even your ice cube tray for mini-pops. After filling, cover your molds tightly with foil. Poke a toothpick or wooden popsicle stick through the foil into the center of each popsicle. The foil keeps the toothpicks upright the popsicles freeze.

Melon Mint Popsicles

Makes 8, 2-ounce popsicles

Ingredients:
  • 1¾ cups cubed honeydew melon
  • 2 small mint leaves, minced
  • 1/8 teaspoon grated ginger
  • 1 tablespoon sugar

Directions:
  1. Combine all ingredient in blender and puree until smooth
  2. Pour into popsicle molds or small paper cups
  3. Insert popsicle sticks and freeze until hard

Acai Berry Popsicles

Makes 8, 2-ounce popsicles

Ingredients:
  • 1 3.5-ounce packet of acai puree
  • 2 cups fresh or frozen strawberries, stems removed
  • ¾ cup fresh or frozen blueberries
  • 1 tablespoon lemon juice
  • Sugar, to taste

Ingredients:

  1. Combine all ingredients in blender and puree until smooth
  2. Pour into popsicle molds or small paper cups
  3. Insert popsicle sticks and freeze until hard

Orange-Lime Popsicles

Makes 8, 2-ounce popsicles

Ingredients:
  • ½ cup limeade concentrate, thawed slightly
  • 1 cup freshly-squeezed orange juice
  • 2 tablespoons Triple Sec or other orange liqueur

Directions:

  1. Stir all ingredients together in a large bowl
  2. Pour into popsicle molds or small paper cups
  3. Insert popsicle sticks and freeze until hard
