Skip the bad necktie this Father's Day and whip up a meal fit for a king. We've combined three Father's Day faves -- meat, potatoes and the grill -- to create a Father's Day menu every Dad will love.Grilled Rack of Lamb
Serves 4-6
Ingredients:1 teaspoon dried rosemary
1 teaspoon paprika
1/2 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon ground black pepper
1 teaspoon balsamic vinegar
1 tablespoon olive oil
2 racks of lamb
Directions:
- Prepare grill
- Combine rosemary, paprika, garlic powder, salt and pepper in a small bowl
- Add balsamic vinegar and stir until a paste forms
- Drizzle olive oil over the lamb then rub spice paste over the meat until it's evenly coated
- Place lamb on lightly-oiled grill rack, on the hottest part of the grill, meat side down
- Cover and cook until lamb reaches desired temperature (145 degrees Fahrenheit for medium-rare; 160 degrees Fahrenheit for medium), flipping once halfway through
- Remove lamb from grill and let it rest for 10 minutes
- Slice and serve
Grilled New Potato Skewers
Serves 6
Ingredients:1 pound red new potatoes, rinsed, patted dry and cut in half
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon freshly-squeezed lemon juice
Directions:
- Toss potatoes, olive oil, salt and pepper in a large bowl until potatoes are evenly coated
- Divide potatoes evenly between six metal skewers
- Grill skewers, covered, until they soften and begin to brown, 12-15 minutes, turning halfway through cooking
- Remove potatoes from grill, sprinkle with lemon juice and serve
Grilled Pineapple with Black Pepper
Serves 6
Ingredients:1 pineapple, peeled, cored and cut into 1-inch thick slices
1 teaspoon sugar
1/4 teaspoon cracked black peppercorns
Vanilla Ice Cream
Directions:
- Preheat grill
- Sprinkle both sides of pineapple slices with sugar and peppercorns
- Place pineapple slices on lightly-oiled grill rack and cook until pineapple begins to caramelize, about 5 minutes per side
- Remove pineapple from grill and serve with vanilla ice cream
