Quinoa: three ways

Have you tried quinoa? It looks and acts like couscous but it’s actually a whole grain. When cooked, it’s a teeny bit crunchy and takes on the flavor of whatever it’s seasoned with. As a result, it’s really super versatile. Seriously, quinoa is one of those things that can be adapted for breakfast, lunch or dinner. These three recipes let you do just that.

The key with using quinoa is to rinse it first. That washes away the hint of bitterness that can come with this grain, leaving a pleasant, adaptable food. Also, you should know that this grain is very filling so a little will go a long way.

Breakfast: Apple Cinnamon Quinoa
serves 4

1 cup quinoa, rinsed and drained
2 cups apple juice
1 teaspoon cinnamon
1 teaspoon sugar (optional)

In a medium saucepan, combine the quinoa and apple juice. Bring to a boil.

Cover the pan and reduce the heat to low. Simmer for 15 minutes.

Remove from heat.  Stir in cinnamon and taste – if desired, add sugar to sweeten.

Serve immediately.

Lunch: Avocado, Red Pepper and Black Bean Quinoa
serves 4

1 cup quinoa, rinsed and drained
2 cups vegetable stock or broth
1 teaspoon olive oil
1 avocado, diced
1 red pepper, diced
1 can black beans, drained and rinsed
2 tablespoons lime juice
salt and pepper

In a medium saucepan, combine the quinoa, the vegetable stock or broth and the olive oil. Bring to a boil.

Reduce the heat to low and cover the pan. Simmer for 15 minutes. Remove from heat.

Stir in the avocado, red pepper, black beans, lime juice and salt and pepper.

Serve immediately.

Dinner: Garlic, Basil and Parmesan Quinoa Side Dish
serves 4

2 cups chicken (or vegetable) broth/stock
1 cup quinoa, rinsed
1 tablespoon fresh basil, finely chopped
2 cloves garlic, minced
1/2 cup freshly grated Parmesan cheese
salt (sea salt or Kosher)

Bring the broth/stock to a boil over medium heat. Stir in the quinoa. Cover and reduce heat to low. Simmer for 15 minutes.

Stir in the basil, garlic, cheese and salt until fully combined.

Serve immediately.
